Francine’s Best Soy Cookies recipe

Francines Best Soy Cookies.

Wholesome oatmeal soy cookies studded withchocolate chips and crunchy toasted soybeans.

Recipe: Francine’s Best SoyCookies

2 cups soy margarine
2 1/4 cups packed brown sugar
2 1/4 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
3/4 cup soy flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1 1/2 cups quick-cooking oats
2 cups sweetened flake coconut
2 cups semisweet chocolate chips
2 cups whole toasted soybeans

  • Preheat oven to 325°F (160°C).
  • Cream margarine, brown sugar, sugar, eggsand vanilla on medium speed of mixer until blended.
  • Combine flour, soy flour, salt, bakingsoda and baking powder; mix well. Add flour mixture to sugarmixture. Mix until ingredients are combined; do not overtax.
  • Add remaining ingredients, one at a time;mix well after each addition. Lightly spray baking sheets withvegetable cooking spray. Drop dough onto sheets 2 inches apart.Bake about 15 minutes or until lightly browned.

    Makes 30 cookies.

    I have a son with allergies, so any recipe I can find that I can make substitutions for I try. With the soy milk and his dairy free margarine and chocolate chips, he was able to eat them and they were awesome. Didn t have any of the funny taste that allergy free foods sometimes have! So, I love to bake. I mean, who doesn t? But I have gone through a lot of chocolate chip cookies recipies in my experiences with baking and let me just tell you that these are by far the best cookies I have ever made you might not notice it at the beginning but when you eat them all the time like me, you notice a good cookie recipie when you see one and this my friends is probably the best I have tasted in a while.
