Recipe: Four-Cheese Pate
3 (8-ounce) packages cream cheese, softened- divided use2 tablespoons milk2 tablespoons sour cream3/4 cup chopped pecans4 ounces Brie or Camembert, rind removed,softened1 cup shredded Swiss cheese4 ounces crumbled blue cheese1/2 cup pecan halvesRed and green apple slice and/or crackers
In a mixing bowl, beat one package ofcream cheese with milk and sour cream until smooth. Spread intoa 9-inch pie plate lined with plastic wrap. Sprinkle with choppedpecans.
In a mixing bowl, beat Brie, Swiss, bluecheese and remaining cream cheese until thoroughly combined.Gently spread over chopped pecans, smoothing the top to forma flat surface. Cover and chill overnight or at least severalhours.
Before serving, invert onto a plate andremove plastic wrap. Arrange pecan halves on top. Serve withapples and/or a variety of crackers.
Makes about 18 servings.
