Fluffy Fruit and Pasta Salad recipe

An unusual combination of ingredients thatis surprisingly good! This rich, fruity salad makes a fine accompanimentfor baked ham.

Recipe: Fluffy Fruit andPasta Salad

1 cup powdered sugar2 large eggs1/2 cup lemon juice1/2 teaspoon salt1/2 pound spaghetti pasta, broken into2-inch pieces1 (20-ounce) can pineapple tidbits3 tart apples, peeled and diced1 (8-ounce) carton non-dairy whipped topping,thawed1/4 cup chopped walnutsMaraschino cherries, halved

  • In a saucepan, combine sugar, eggs, lemonjuice and salt; cook and stir over medium heat until mixturehas thickened, about 4 minutes. Cool completely.
  • Cook spaghetti according to package directions;drain and rinse under cold water. Place in a large bowl.
  • Drain pineapple, reserving juice. Pourjuice over the spaghetti; stir in apples. Toss gently; drain.Stir in the egg mixture and pineapple. Cover and refrigerateovernight. Fold in whipped topping just before serving. Garnishwith walnuts and cherries.

    Makes 12 to 14 servings.
