Flo’s Carrot Bars recipe

A jar of baby food carrots is Flo’s secretingredient in these carrot bars topped with a cream cheese frosting.

Recipe: Flo’s Carrot Bars

Carrot Bars:2 large eggs
1 cup granulated sugar
3/4 cup vegetable oil
1 cup baby food carrots
2 teaspoons vanilla extract – divided use
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup nuts, chopped
Cream Cheese Frosting:1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 1/2 cups powdered sugar, siftedPreheat oven to 375º F (175ºC).

  • For Carrot Bars: In a medium bowl combineeggs, sugar, oil, and baby food carrots. Stir in 1 teaspoon vanillaextract, flour, baking soda, cinnamon, and chopped nuts. Pourinto a greased and floured 15-inch jelly roll pan. Bake for 15to 20 minutes. Cool on rack. Frost.
  • For Cream Cheese Frosting: In a smallbowl beat butter, cream cheese, 1 teaspoon vanilla extract, andpowdered sugar until of spreading consistency.

    Makes 16 bars.
