Fig Oatmeal Cookies recipe

Wholesome oatmeal cookies laced with choppedfigs and sweetened with honey.

Recipe: Fig Oatmeal Cookies

1/4 cup firmly packed brown sugar
1/2 cup honey
1/3 cup chopped figs
2/3 cup butter or margarine
2 large eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 tablespoons chopped figs
1/4 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
1 1/3 cups quick-cooking oats
1/2 cup chopped walnuts

  • Preheat oven to 350°F (175°C).Grease a baking sheet; set aside.
  • In a large bowl, with an electric mixeron medium speed, beat brown sugar, honey, 1/3 cup figs and butteruntil creamy, 3 to 5 minutes. Add eggs and beat until well blended.
  • In a separate bowl blend together bakingsoda, salt, cinnamon, vanilla, 2 tablespoons figs and nutmeg;add to the creamed mixture. Add flour, oats and walnuts; mixfor 2 minutes on low speed, then 3 minutes on medium speed.
  • Drop by tablespoonfuls 2-inches apartonto prepared baking sheet.
  • Bake for 10 to 15 minutes.

    Makes 36 cookies.

Hmmm, I’ve never had that problem with this oatmeal cookie base recipe. It does sound like what happens if the butter is too melty. Maybe it got too warm in the creaming process so it needed even more chilling?
