Fiesta Corn Bread recipe

Fiesta Corn Bread.

Moister than most corn breads, this flavorfulcorn bread is enriched with evaporated milk, cheddar cheese andmild green chiles.

Recipe: Fiesta Corn Bread

2 cups all-purpose flour
1 1/2 cups yellow corn meal
1 1/2 cups (6 ounces) shredded mild cheddar cheese
1 (7-ounce) can diced green chiles
1/2 cup granulated sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
1 (12-ounce) can NESTL ® CARNATION® EvaporatedMilk
1/2 cup vegetable oil
2 large eggs, lightly beaten

  • Preheat oven to 375°F (190°C).Grease a 13 x 9-inch baking dish.
  • Combine flour, cornmeal, cheese, chiles,sugar, baking powder and salt in large bowl; mix well. Add evaporatedmilk, vegetable oil and eggs; stir just until moistened. Spreadinto prepared baking pan.
  • Bake for 30 to 35 minutes or until woodenpick inserted in center comes out clean. Cool in pan on wirerack for 10 minutes; cut into squares. Serve warm.

    Makes 24 servings.
