Fiesta Bites recipe

Crispy fried flour tortillas filled withMonterey Jack cheese and salsa.

Recipe: Fiesta Bites

6 tablespoons butter
6 large flour tortillas
3/4 cup (6 ounces) shredded Wisconsin Monterey Jack cheese
3/4 cup salsa or taco sauce

  • Melt 1 tablespoon butter in large skilletover medium-high heat. Add 1 tortilla and fry on each side untillightly browned. Place about 1 ounce of cheese and 2 tablespoonssalsa along center of tortilla. Fold sides of tortilla to thecenter, overlapping slightly. Continue frying until tortillais golden brown and cheese is melted. Transfer to platter andkeep warm in oven. Repeat with remaining ingredients.
  • Cut each tortilla into 5 pieces and servehot.

    Makes 30 servings.

    Optional ingredients: Sprinkle cumin andchili powder on tortilla. Top with 1 tablespoon each choppedonion and green pepper. Then top with cheese and salsa and prepareas indicated.
