Favorite Cheesecake recipe

This fluffy, delicate cheesecake will quicklybecome a favorite with your family.

Recipe: Favorite Cheesecake

Crust:2 1/2 cups graham cracker crumbs (about40 squares)1/3 cup granulated sugar1/2 teaspoon ground cinnamon1/2 cup butter, meltedFilling:3 (8-ounce) packages cream cheese, softened1 1/2 cups granulated sugar1 teaspoon vanilla extract4 large eggs, separatedTopping:1/2 cup sour cream2 tablespoons granulated sugar1/2 teaspoon vanilla extract1/2 cup heavy cream, whipped

  • In a small bowl, combine the cracker crumbs,sugar and cinnamon; stir in butter. Press onto the bottom and2-inches up the sides of a greased 9-inch springform pan. Bakeat 350°F (175°F) for 5 minutes. Cool on a wire rack.Reduce heat to 325°F (160°C).
  • In a mixing bowl, beat cream cheese, sugarand vanilla until smooth. Add egg yolks; beat on low just untilcombined.
  • In a small mixing bowl, beat egg whitesuntil soft peaks form; fold into cream cheese mixture. Pour overcrust. Bake for 1 hour or until center is almost set. Cool ona wire rack for 10 minutes. carefully run a knife around edgeof pan to loosen; cool 1 hour longer. Refrigerate until completelycooled.
  • Combine the sour cream, sugar and vanilla;fold in whipped cream. Spread over cheesecake. Refrigerate overnight.Remove side of pan.
