Fantastic Pork Fajitas.

You can’t get dinner on the table any fasterthan this: Stir-fried pork, onion and pepper, rolled up in warmtortillas with salsa. Add carrot and celery sticks, tortillachips and purchased guacamole to complete this simple supper.

Recipe: Fantastic Pork Fajitas

1 pound boneless pork loin, cut into 3x1x1/8-inchstrips
1/2 medium onion, peeled and sliced
1 green bell pepper, seeded and sliced
2 teaspoons vegetable oil
4 flour tortillas, warmed
1 cup salsa

  • Heat oil in large nonstick skillet overmedium-high heat. Stir-fry pork, onion and green pepper 4 to5 minutes, until pork is lightly browned and onion tender.
  • Roll up pork mixture in flour tortillasand serve with salsa.

    Serves 4.

    I m so making these fajitas this weekend when my inlaws come to visit. We re a tough crowd to please; my father-in-law won t eat poultry, my husband won t eat beef; I don t really like fish and my mother-in-law doesn t like shrimp. So, it s pretty much an all-pork diet when they visit. I m always on the lookout for new ways to serve it. I m just curious. Did you use the oven method for your pork? Or the slow cooker method? And, when you made this to feed a larger crowd, did you just double the recipe? Thank you!
