Recipe: Excellent PeanutButter Cookies with Variations

3 cups all-purpose flour1 teaspoon baking soda1 teaspoon baking powder1/4 teaspoon kosher or sea salt1 cup dark brown sugar, firmly packed1 cup granulated sugar1/2 cup vegetable shortening1/2 cup butter, softened2 large eggs1 cup smooth peanut butter*1 1/2 teaspoons vanilla extract

  • Heat oven to 375°F (190°C).
  • In medium bowl combine flour, baking soda,baking powder and salt. Mix well andset aside.
  • Cream sugars, shortening and margarinein a large bowl using an electric mixer at mediumspeed until texture is fluffy and light in color. Add eggs, peanutbutter and vanilla; continue to beatan additional 3 minutes.
  • Add flour mixture and stir by hand until just mixed.
  • Form heaping tablespoon-size balls andplace 2-inches apart onto an ungreased bakingsheet. With a fork dipped in flour, gently press a criss-crosspattern on top of each cookie.
  • Bake on top shelf of oven for 10 to 12minutes, turning sheet around halfway throughbaking time to ensure even browning. Transfer cookies immediatelyto wire cookie racks to cool.

    Makes 4 dozen or 48 cookies.

    *Add 2 tablespoons more for crunchy-stylepeanut butter.


    • Chocolate Chip Peanut Butter Cookies:Follow the basic recipe and stir in 1 cupsemisweet chocolate chips into batter. Bakeas directed.
    • Peanut Butter Crackles:Follow basic recipe. Roll balls in not flatten with fork. Bake for 15 to 18minutes. Remove from oven and immediately press chocolate candykiss firmly into top of each cookie.The cookies will crack around the edges, thus the name.
