A splendid chocolate layer cake filledwith a whipped cream filling laced with crushed chocolate-coveredEnglish toffee and topped with chocolate glaze and more crushedtoffee.
Recipe: English Toffee Cake
Heat oven to 350°F (175°C). Greaseand flour two 9-inch round baking pans.
For Cake: In a large bowl, combine 1 cupsugar, flour, cocoa, baking soda and salt; set aside.
In a small bowl, beat egg whites untilfoamy; gradually add remaining 1/2 cup sugar, beating until stiffpeaks form.
To the flour mixture add the oil, buttermilkand egg yolks an beat until smooth. Gently fold egg whites intobatter. Pour into prepared pans.
Bake 25 to 30 minutes or until cake springsback when touched lightly in center. Cool 5 minutes; remove frompans to wire racks. Cool completely.
For Chocolate Glaze: Combine sugar andcocoa in small saucepan; stir in half-and-half and the butter.Cook over medium heat, stirring constantly, until mixture comesto boil. Boil 1 minute. Cool to room temperature, stirring occasionally.
For Whipped Cream Filling: In large bowlbeat together the heavy cream, powdered sugar and vanilla untilstiff peaks form. Refrigerate until ready to use.
To Assemble: Place one cake layer on servingplate; spread whipped cream filling over top. Sprinkle with halfthe crushed toffee candy. Top with other layer. Spoon ChocolateGlaze over top of cake, allowing glaze to drip down sides. Sprinklewith remaining toffee. Store, covered, in refrigerator.

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt2 large eggs, separated
1/2 cup vegetable oil
1 cup buttermilk*Chocolate Glaze:1/2 cup granulated sugar1/4 cup unsweetened cocoa powder3 tablespoons half-and-half5 tablespoons butterWhipped Cream Filling:
2 cups cold heavy or whipping cream1/3 cup powdered sugar2 teaspoons vanilla extract1 cup (about 8 ounces) crushed Englishtoffee candies – divided use
Makes 10 servings.
*Or place 1 tablespoon white vinegar ina measuring cup and add milk to equal 1 cup. Allow to set for2 to 3 minutes before using.
