English Muffin Bread recipe

With a taste and texture similiar to anEnglish muffin, this easy yeast bread makes wonderful toast.A recipe for bread machines.

Recipe: English Muffin Bread

1 teaspoon vinegar
1/2 cup water
1 cup milk
2 tablespoons melted butter or vegetable oil
1 1/2 teaspoons salt
1 1/2 teaspoons granulated sugar
1/2 teaspoon baking powder
3 1/2 cups all-purpose flour
2 1/2 teaspoons active dry yeastCornmeal (optional)

  • Place ingredients in the bread machinepan in the order suggested by the manufacturer.
  • Select Basic bread cycle and start machine.For an authentic English muffin effect, remove the dough afterthe final kneading and roll it in cornmeal. Place the dough backin the machine to rise and bake.

    Makes a 1 1/2 pound loaf.

    Letting the loaf cool completely before slicing it is one of the hardest things to do, but one of the most important. The english muffin bread is soft and squishy when warm and trying to slice it in that state will tear it apart or flatten it completely. Neither is good. So, let that bread cool! Are you using instant or bread machine yeast? Rapid Rise yeast is different and usually needs to be dissolved into warm water before adding to a recipe. I ve had others say that they ve used rapid rise and it worked okay, but it probably won t work as consistently as instant or bread machine yeast.
