Eggnog Cake recipe

Save yourself some time and effort andpurchase a ready-made angel food cake to make this festive eggnogcake.

Recipe: Eggnog Cake

1 package angel food cake mix
1/2 cup cornstarch
1 quart commercially prepared eggnog
1 cup granulated sugar
1 teaspoon vanilla extract
2 packages non-dairy topping mix (dry)
1/8 teaspoon red food coloring
1/8 teaspoon green food coloring

  • Prepare the angel food cake accordingto package directions.
  • In a medium bowl, combine cornstarch anda small amount from 1 quart eggnog, mixing until smooth. Addsugar, vanilla, and the rest of the eggnog. Pour into a saucepanand cook over medium heat until the mixture thickens, stirringconstantly (about 20 to 30 minutes, or until a spoon can almoststand in the mixture). Remove from stove and let cool for about20 minutes.
  • Divide angel food cake into 3 layers andfrost with eggnog mixture. Prepare non-dairy topping mix (dry)according to package directions.
  • Divide and mix in red food coloring orgreen food coloring. Spread alternately on the sides and top.

    Makes 12 servings.
