Easy Rum Cake recipe

This rich cake is reminiscent of poundcake thanks to the vanilla pudding mix. It’s rich and sweet andcompletely irresistible!

Recipe: Easy Rum Cake

1 cup finely chopped nuts
1 (18.25-ounce) package yellow cake mix
1 (18.25-ounce) package instant vanilla pudding mix
4 large eggs
1/2 cup cold water
1/2 cup vegetable oil
1 cup rum, divided use
1 cup granulated sugar
1/2 cup butter
1/4 cup water

  • Preheat oven to 325°F (160°C).Grease a tube pan.
  • Sprinkle nuts in the bottom of a the tubepan.
  • Combine cake mix, pudding mix, eggs, coldwater, oil, and half of the rum in a large bowl. Mix for 2 minutes.Pour over nuts. Bake for 60 minutes. Allow to cool.
  • Meanwhile, combine sugar, butter and secondaddition of water in a saucepan. Boil for five minutes, stirringconstantly; remove from the heat. Stir in remaining half of rumthen return to heat just until mixture boils. Prick the cakeall over the top and pour on the glaze.

    Makes 12 servings.
