Easy Rhubarb Crisp recipe

A microwave recipe for rhubarb crisp.

Recipe: Easy Rhubarb Crisp

2 cups chopped rhubarb
1/2 cup granulated sugar
2 tablespoons butter
1/4 cup firmly packed brown sugar
1/4 cup whole wheat flour
1/4 cup quick-cooking oats
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts

  • In a microwave-safe baking dish combinerhubarb and sugar.
  • Microwave on HIGH for 3 minutes, stirringonce.
  • In a separate bowl combine butter, brownsugar, whole wheat flour, quick cooking oats and cinnamon; mixuntil crumbly. Add walnuts; sprinkle over the rhubarb mixture.
  • Microwave on MEDIUM for 6 minutes.
  • Serve over ice cream, if desired.

    Makes 8 servings.
