Easy Pesto.

Making fresh basil pesto is as easy astossing the ingredients into a food processor or blender andpressing a button.

Recipe: Easy Pesto

2 1/2 cups lightly packed fresh basilleaves1 cup freshly grated Parmesan or Romanocheese1/3 cup extra virgin olive oil1/4 cup toasted pine nuts*, plus additional2 tablespoons if desiredKosher or sea salt and freshly groundpepper to taste

  • In a blender or food processor, combinethe basil, Parmesan or Romano, olive oil and 1/4 cup toastedpine nuts. Whirl to form a paste.
  • Stir in the remaining 2 tablespoons pinenuts, if using; season to taste with salt and pepper.

    Makes about 2 cups or 8 (1/4-cup) servings.

    *To toast pine nuts, place in skillet overmedium heat and toast, stirring constantly, until golden in color.Be careful not to burn the nuts.
