2 cups granulated sugar 1 cup light corn syrup 1 cup water 1/8 teaspoon salt 2 cups chopped raw pecans 1 tablespoon butter 1 teaspoon baking soda
Lightly grease a baking sheet and setaside.
Combine sugar, light corn syrup, waterand salt in a large, heavy saucepan. Bring to a rolling boilover medium-high heat. Add chopped pecans; continue cooking,stirring frequently, until mixture reaches 300°F (150°C)on candy thermometer or until syrup, when dropped into very coldwater, separates into threads which are hard and brittle. Removefrom heat and stir in butter and baking soda.
Pour onto prepared baking sheet. Coolcompletely before breaking into pieces.
Makes 16 servings.
