Easy Oven-Fried Chicken.

“Fried chicken” doesn’t get mucheasier than this. This simple recipe gives you the choice ofoven-frying a whole, cut-up chicken or chicken breast strips.

Recipe: Easy Oven-Fried Chicken

1 (2 1/2 pound) whole fryer chicken, cut-up,or 6 boneless, skinless chicken breast halves cut into about1 1/2-inch wide strips, or 1 package (approximately 2 pounds)of chicken tendersKosher or sea salt and freshly groundblack pepper, as needed1/2 cup buttermilk1 cup all-purpose flour, plus more ifneeded2 teaspoons paprika1/2 teaspoon garlic powder1/2 teaspoon onion powder1 teaspoon kosher or sea salt1/4 teaspoon freshly ground black pepper1/4 cup butter2 tablespoons vegetable oil

  • Preheat oven to 425°F (220°C).
  • Cut up chicken and season, as desired,with salt and pepper on both sides.
  • Place buttermilk in a large bowl, addthe chicken pieces and toss to coat each piece; set aside.
  • In a large plastic bag, combine 1 cupflour, paprika, garlic powder, onion powder, salt and pepper.
  • Gently shake off excess buttermilk andadd chicken pieces to flour mixture, seal bag, trapping as muchair in the bag so as to inflate, then shake to coat each piecewell, adding a small amount of flour only if necessary to coateach piece nicely; set aside.
  • Place butter in a large baking sheet panwith sides and melt in oven (watch closely or it will burn);immediately remove and add the oil, stirring to blend.
  • Place breaded chicken (skin side downif using whole cut-up chicken) in the butter/oil mixture in bakingpan.
  • To Bake Whole Cut-Up Chicken: Bake, uncoveredfor 30 minutes; turn chicken over and bake for an additional30 minutes, or until juices run clear.
  • To Bake Chicken Breast Strips: Bake, uncoveredfor 15 minutes; turn chicken over and bake for an additional15 minutes, or until juices run clear.

    Make 4 to 6 servings.

    Note: Cooking time can vary depending onthe size of the chicken pieces/strips, so watch closely.
