Easy Harvey Wallbanger Cake recipe

A glazed, ‘cake-mix-easy’, orange and vodkacake that will remind you of the classic cocktail.

Recipe: Easy Harvey WallbangerCake

1 (18.25-ounce) package yellow cake mix1 (3.5-ounce) package vanilla puddingmix4 large eggs1/2 cup vegetable oil1/2 cup, plus 2 tablespoons orangeliqueur4 tablespoons vodka1/2 cup, plus 2 tablespoons orangejuice1 cup powdered sugar

  • Preheat oven to 350°F (175°C).Grease and flour one 10-inch tube pan; setaside.
  • Combine cake and pudding mix in a largebowl. Add the eggs, vegetable oil,1/2 cup orange liqueur, 2 tablespoonsvodka, and 1/2 cup orange juice. Beatwith electric mixer for 4 minutes. Pour into prepared pan.
  • Bake for 45 minutes, or until wooden pickinserted in center comes out clean.Let cake cool in pan for 10 minutes then removeand place on cooling rack.
  • Spoon glaze over cake whileit is still warm.

    Makes 12 servings.

    Glaze: Combineremaining 2 tablespoons orange liqueur, 2tablespoons vodka, and 2 tablespoons orange juicewith the powdered sugar and blend until smooth.Spoon glaze evenly over warm cake.
