Recipe: Easy Black Bean Chili

Chili:2 pounds lean ground beef
1 large onion, chopped
2 teaspoons garlic, finely chopped1 teaspoon kosher or sea saltFreshly ground black pepper to taste
2 (15-ounce) cans black beans, rinsed and drained1 (14-ounce) can ready-diced tomatoeswith juice
1 (8-ounce) can tomato sauce
2 tablespoons chili powder
1 (4-ounce) can diced mild green chiles
1 teaspoon ground cumin
Suggested Accompaniments:
Sour creamShredded cheddar cheese
Chopped fresh cilantro

  • In large saucepan, brown ground beef overmedium high heat until done; drain excess fat. Stir in onionsand garlic and cook over medium heat, stirring occasionally,until onions are soft and lightly browned, 3 to 4 minutes.
  • Add beans, diced tomatoes, tomato sauce,chili powder, chilies and cumin, bring to a boil and continuecooking for 20 to 30 minutes for flavors to blend.
  • Ladle hot chili into individual servingbowls and top with accompaniments, if desired.

    Makes 8 servings.
