Dutch Cheesecake recipe

A nontraditional cheesecake made with Goudacheese.

Recipe: Dutch Cheesecake

2 large egg yolks
1/4 cup powdered sugar
1 1/2 cups shredded Gouda cheese
1/3 cup heavy cream
1/4 cup all-purpose flour
1 teaspoon lemon juice
1 teaspoon grated lemon peel
1/3 cup golden raisins
2 large egg whites
2 tablespoons powdered sugar
1 (9-inch) graham cracker pie crust

  • In a large mixing bowl, beat togetheregg yolks and 1/4 cup powdered sugar until well blended, about5 minutes. Beat in Gouda cheese, cream, flour, lemon juice, gratedlemon peel and golden raisins.
  • In a small bowl beat egg whites untilfrothy, then gradually add 2 tablespoons powdered sugar and continueto beat until the whites form stiff peaks. Fold the egg whitesinto the cheese mixture.
  • Pour into a graham cracker pie crust andbake in a 350°F (175°C) oven for 45 minutes. Cool toroom temperature, then chill before serving.

    Makes 12 servings.
