Double-Quick Dinner Rolls recipe

These homemade dinner rolls are easy tomake and will fill your kitchen with a wonderful aroma.

Recipe: Double-Quick DinnerRolls

3 1/4 cups all-purpose or bread flour- divided use
2 tablespoons granulated sugar
1 teaspoon salt
1 (1/4-ounce) package active dry yeast or 2 1/2 teaspoonsactive dry yeast
1 cup warm water1 large egg
2 tablespoons butter

  • In a large mixing bowl, combine 1 1/4cups flour, sugar, salt and yeast. Make a well in the centerand add warm water (115°F to 120°F / 45°C to 50°C),egg and butter. Beat with an electric mixer on low speed untilsmooth. Stir in remaining 2 cups flour and mix well. Dough shouldbe soft and elastic. Scrape sides of bowl, cover with a toweland let rise in a warm place until doubled in size, about 45minutes.
  • Lightly flour a work surface and kneaddough for about 2 minutes. Press into a 12 x 6-inch rectangleand cut into 18 equal pieces. Roll each piece into a smooth balland place on baking sheets. Cover and allow to rise in a warmplace until almost doubled in size, about 45 minutes.
  • Meanwhile, preheat oven to 375°F (190°C).
  • If desired, brush tops of rolls with anegg white mixed with a little water.
  • Bake until golden brown, 15 to 20 minutes.Serve warm.

    Makes 18 rolls.

    After about 5 minutes of kneading, give your dough the “doorbell” test. Lightly flour your finger and press into the dough just like you would to ring a doorbell. Just a quick “ding,” not a prolonged “bzzzzzzzzz”. The dough should spring back and fill in the indentation of your finger quickly. If not, knead a little longer and try again. The recipe looks great-but I have two questions. Oven space is at a premium at our holiday gathering. Will it work to bake the rolls and then freeze them? Is so, what would my before-serving procedure be? Also, my goofy family likes to put food coloring in dough on holidays-so green rolls are special. Would food coloring affect this recipe in any negative way?
