Double Chocolate Mint Bars recipe

They look like brownies but have a delightfulminty flavor. Heavenly with a scoop of vanilla ice cream!

Recipe: Double ChocolateMint Bars

1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened baking cocoa
1/3 cup firmly packed brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter, chilled
3 large eggs
1/2 teaspoon mint extract – divided use
1/2 cup butter
2 cups semisweet chocolate chips
1 (14-ounce) can sweetened condensed milk

  • Preheat oven to 375º F (175ºC). Grease a 13 x 9-inch baking dish; set aside.
  • In a bowl combine flour, sugar, cocoa,brown sugar, baking powder and salt. Cut in first addition ofbutter until mixture resembles coarse crumbs.
  • Beat in eggs and half of the mint extract.Spread batter in prepared baking pan and bake until center isset, 20 to 25 minutes.
  • Meanwhile, in a small saucepan, melt remainingbutter with chocolate chips. Stir in condensed milk and remainingmint extract. Pour over baked layer and let stand until set,at least 2 hours.

    Makes 16 bars.
