An oat cookie crust is topped with a sweetfilling made with sliced almonds, cherry preserves and driedcherries.
Recipe: Double Cherry OatmealBars
Oat Cookie Crust:1 1/2 cups quick or old fashioned oats
1 cup all-purpose flour
1/2 cup firmly packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup plus 2 tablespoons butter, meltedTopping:
3/4 cup sliced unblanched almonds
1 (10 to 12-ounce) jar cherry preserves
1 tablespoon fresh lemon juice
1/4 teaspoon almond extract
1 cup dried cherries
Makes 24 bars.
- Flavor Variation: Sprinkle 1 cup semisweetchocolate chips or white chocolate chips over cherry fillingbefore topping with the oat mixture.
- If using 8 x 8-inch pan, increase bakingtime to 35 to 40 minutes.
