Classic Irish sweet buns. Eat hot, and’do be careful’ not to drip the butter on your clothes!
Recipe: Do Be Careful TeaCakes
1/2 ounce dried yeast1/2 cup warm water3 1/2 cup all-purpose flour1 teaspoon salt1/2 cup granulated sugar3/4 cup butter, melted1/2 teaspoon nutmeg4 large eggs, well beaten
Mix yeast with water and 1 cup flour ina small bowl. Cover with a clean cloth and leave in a warm placefor 10 to15 minutes to form a sponge.
Add the yeast mixture to the rest of theflour, salt and sugar. Add in the other ingredients, mix welland turn out on a floured surface. Knead until dough is smoothand elastic.
Divide the dough into 16 balls. Placethem on lightly greased baking sheets and leave in a warm placecovered with a damp cloth for 20 minutes to allow them to rise.
Brush with beaten egg before putting theminto the oven.
Bake at 400°F (205°C) for 20 minutesor until nicely browned.
Yield: 16 buns.
