Recipe: Deluxe Oatmeal Cookieswith Raisinets

1 1/4 cups white whole-wheat or all-purposeflour1 teaspoon baking soda3/4 teaspoon ground cinnamon1/2 teaspoon salt1 cup (2 sticks) butter or margarine,softened3/4 cup granulated sugar3/4 cup packed brown sugar1 teaspoon vanilla extract2 large eggs3 cups quick or old-fashioned oats2 1/4 cups (14 ounces) NESTL RAISINETSMilk Chocolate-Covered Raisins1 cup chopped nuts (optional)

  • Preheat oven to 375°F (190°C).
  • Combine flour, baking soda, cinnamon andsalt in small bowl. Beat butter, granulated sugar, brown sugarand vanilla extract in large mixer bowl until creamy. Beat ineggs; gradually beat in flour mixture. Stir in oats, Raisinetsand nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes. Cool on bakingsheets for 2 minutes; remove to wire racks to cool completely.

    Makes 5 dozen (60 cookies).

    Both of my oatmeal cookie recipes are delicious I brought them both to work and each batch was gone within 30 minutes! If you want a thick, puffy cookie, go with It s the buttery, chewy oats, the kick of cinnamon, and the overload of plump, juicy raisins that lure me in every time. Or maybe it s because they sound healthier? Whatever.


    I also like my cookies with a ton of texture and chunks, so I made sure to overload these guys with raisinets. I was going to add some nuts to them, but alas was fresh out of walnuts. I didn t really miss them, though, because there was plenty of texture from the oats and raisinets.
