Deluxe Cheesecake recipe

A creamy cheesecake with a vanilla wafercrumb crust and sour cream topping, served with cherry or strawberrypie filling.

Recipe: Deluxe Cheesecake

2 cups vanilla wafer crumbs (60 cookies)
1/2 cup butter, meltedFilling:
4 (8-ounce) packages cream cheese, softened
1 1/3 cups granulated sugar
4 large eggs
2 teaspoons vanilla extractTopping:
2 cups sour cream
1/4 cup granulated sugar
2 teaspoons vanilla extract
Cherry or strawberry pie filling

  • For Crust: Combine crumbs and butter;press onto bottom of 13 x 9-inch pan.
  • For Filling: Combine cream cheese andsugar, mixing at medium speed on electric mixer until well-blended.Add eggs, one at a time, mixing well after each addition. Blendin vanilla; pour over crust.
  • Bake at 375°F (190°C) for 30 minutes.Remove from oven and let stand 15 minutes.
  • Increase oven temperature to 425°F(220°C).
  • For Topping: Combine sour cream, sugarand vanilla. Spread over cheesecake. Bake for 10 minutes.
  • Allow to cool at room temperature; chillbefore serving.
  • Serve with cherry or strawberry pie fillingspooned over individual servings.

    Makes 12 to 16 servings.
