Deep Dish Apple Raisin Pie recipe

This comforting deep dish pie is loadedwith sweet apples and raisins lightly scented with orange juice,cinnamon and nutmeg. Wonderful served warm with a scoop of vanillaice cream.

Recipe: Deep Dish Apple RaisinPie

2 1/2 pounds (6 to 7) Golden Deliciousapples, peeled and thinly sliced
1/2 cup raisins
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
2 tablespoons orange juice1 teaspoon grated orange peel
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Pinch ground cloves
2 tablespoons butter or margarine
Pastry for one-crust (9-inch) pie

  • Heat oven to 400°F (205°C).
  • In large bowl combine apples, raisins,sugar, flour, orange juice and peel, cinnamon, nutmeg, salt,and cloves. Mound mixture in 2-inch deep 9-inch baking dish.Dot with butter.
  • Cover apple filling with pastry; sealand flute edges. Cut several vents in top crust to vent steam.
  • Bake 50 to 60 minutes or until crust isgolden and apples are tender. Cool at least 30 minutes beforeserving.

    Makes 8 servings.

    You can use a hand or a stand mixer. The dough may be too dense to use the mixer to incorporate all of the flour, so if you feel your mixer s having a hard time, finish kneading the dough by hand until all of the flour is incorporated. One question, you note the size of your spring base tin, but not the height. It s called a deep dish pie, so do we need a unique height pan or just an average size? Thanks, Hayley
