Recipe: Dee’s Flax Bread

1/2 cup warm water1 teaspoon granulated sugar2 tablespoons active yeast3 1/2 cups water, warmed1/4 cup honey1/4 cup molasses1/2 cup vegetable oil2 large eggs2 tablespoons lemon juice1 cup flax seed4 teaspoons salt7 cups whole wheat flour4 cups white bread flour

  • Proof yeast. In a large mixing bowl addsecond amount of warm water, honey,molasses, oil, eggs and lemon juice.Mix well. Add yeast mixture and stir,gradually add 5 cups whole wheat flour, beating well after each addition. Add the flax, stir well.Let stand for 20 minutes, until mixtureis very light.
  • Stir in salt and the rest of the floursuntil dough pulls away from the sidesof the bowl. Knead 10 to 15 minutesuntil dough is smooth and elastic.Put into a greased bowl and cover, let risein the oven with light on until doubled,about 1 hour.
  • Punch down and shape into 6 round balls.Cover and let rest for 20 minutes.
  • Form into loaves and let rise coveredin oven until doubled.
  • Bake at 375°F (190°C) 25 to 35minutes.

    Makes 6 loaves.
