Recipe: Dark Chocolate andMacadamia Nut Toffee
1 cup dark or semisweet chocolate chips- divided use2/3 cup chopped macadamia nuts 3/4 cup butter 3/4 cup granulated sugar 3 tablespoons light corn syrup
Line a 8 or 9-inch square or round panwith foil; extending foil over edges of pan; butter foil.
Reserve 2 tablespoons dark chocolate chips;sprinkle remaining chips and macadamia nuts over bottom of preparedpan.
In a medium-sized heavy saucepan, combinebutter, sugar and corn syrup; cook over low heat, stirring constantly,until butter is melted and sugar is dissolved.
Increase heat to medium; cook, stirringconstantly, until mixture boils. Cook and stir until mixtureturns a light caramel color (about 15 minutes).
Immediately pour mixture over chocolatechip and macadamia nut mixture in pan, spreading evenly.
Immediately sprinkle reserved 2 tablespoonschip mixture over surface, once chips have softened, spread overthe top. Cool completely. Remove from pan; peel off foil. Breakinto pieces. Store tightly covered in cool, dry place.
Makes 1 pound candy.
