Danish Rice Pudding recipe

Creamy, fluffy almond-flavored rice puddingserved with a sweet raspberry sauce.

Recipe: Danish Rice Pudding

2 cups cooked rice
2 cups milk
1/3 cup granulated sugar
1 teaspoon almond extract
1 cup heavy cream
1 (10-ounce) package frozen sweetened raspberries, thawed
8 whole almonds

  • Heat rice, milk and sugar in 2-quart saucepanover medium heat stirring frequently until pudding is thick andcreamy, about 15 minutes. Do not boil. Remove from heat, addalmond extract; cool.
  • Beat cream in chilled bowl until stiffpeaks form. Fold whipped cream into cooled rice mixture.
  • Blend raspberries in blender until smooth;strain.
  • To serve, place pudding in custard cups.Dollop with 1 tablespoon raspberry sauce and top with almonds.

    Makes 8 servings.

    This is a very flavorful Indian rice pudding made with coconut milk, raisins and nuts. It s the best rice pudding I ve ever had, and very easy to make!
