Curried Beef Kebabs recipe

Beef tenderloin cubes marinate for severalhours, or overnight, in a curry-flavored marinade, then threadedon skewers with wedges of bell pepper, tomatoes and onions andbroiled to perfection.

Recipe: Curried Beef Kebabs

2/3 cup olive or vegetable oil1/2 cup beef broth1/2 cup fresh lemon juice2 garlic cloves, finely minced2 teaspoons curry powder2 teaspoons salt4 bay leaves16 whole peppercorns2 pounds beef tenderloin, cut into 1 1/4-inchcubes2 large green bell peppers, cut into wedges3 medium tomatoes, cut into wedges3 medium onions, cut into wedges

  • In a large resealable plastic bag or shallowglass dish, combine the first eight ingredients; mixing well.Remove 2/3 cup for basting and refrigerate. Add beef to remainingmarinade; turn to coat. Cover and refrigerate for 8 hours orovernight. Drain and discard the marinade.
  • On metal or water-soaked bamboo skewers,alternate beef, green peppers, tomatoes and onions. Place ona greased rack in a broiler pan; broil 5-inches from heat sourcefor 3 minutes on each side. Baste with reserved marinade. Continuebroiling, turning and basting for 8 to 10 minutes or until meatreaches desired doneness.

    Makes 8 servings.
