Recipe: Crusty French Breadwith Garlic
For 2 Pound Loaf:1 1/3 cups water1 1/2 teaspoons kosher or sea salt1 1/2 teaspoons granulated sugar3 1/2 cups white bread flour1 teaspoon active dry yeast2 cloves garlic, finely chopped, or totasteFor 2 1/2 Pound Loaf:1 2/3 cups water2 teaspoons kosher or sea salt1 tablespoon granulated sugar4 2/3 cups white bread flour1 1/2 teaspoons active dry yeast3 cloves garlic, finely chopped, or totasteFor 3 Pound Loaf:2 cups plus 2 tablespoons water3 teaspoons kosher or sea salt1 1/2 tablespoons granulated sugar6 cups white bread flour2 teaspoons active dry yeast5 cloves garlic, finely chopped, or totaste
Makes one loaf, or depending on weightof loaf, makes 12 to 18 servings.
Cook’s Tip: Unless your bread machine hasretractable mixing/kneading paddle(s), remove them immediatelyafter the last kneading. Doing so not only makes removingthe bread from the pan easier, it also greatly reduces the sizeof the hole(s) left in the bottom of “bread machine”baked breads.
