Crispy rice cereal adds crunch to thesetasty cookies.
Recipe: Crispy Rice Cookies
1/2 cup butter, softened1/2 cup margarine, softened
Preheat oven to 375°F (190°C).Grease a baking sheet.
Beat butter, margarine, sugar and vanillain bowl of an electric mixer on medium speed until light andfluffy. Add flour, baking powder and baking soda; mix well. Stirin cereal by hand.
Drop cookies by level tablespoons ontocookie sheet, about 1 1/2-inches apart (cookies will spread).Bake until lightly browned around edges, 8 to 10 minutes. Coolon cookie sheet 2 minutes; remove to cooling rack. Cool completely.
1 cup granulated sugar
4 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 cups crisped rice cereal
Makes 3 dozen cookies.
