Crispy Peanut Butter Balls recipe

A favorite chocolate-covered peanut buttertreat just got crispier!

Recipe: Crispy Peanut ButterBalls

1 cup light corn syrup
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 1/2 cups chunky peanut butter
2 teaspoons vanilla extract
6 cups crispy rice cereal
Aluminum foil

  • In a saucepan combine light corn syrup,brown sugar and sugar. Cook exactly 2 minutes over high heat.
  • Remove from the heat; stir in chunky peanutbutter and vanilla. Pour the mixture over puffed rice cerealin a large mixing bowl. Stir gently to coat evenly.
  • Drop by spoonfuls onto a large sheet ofaluminum foil and form into 1-inch balls.

    Makes 2 dozen.

    In a large bowl, beat peanut butter and butter until blended; gradually beat in confectioners’ sugar until smooth. Stir in cereal. Shape into 1-in. balls. Refrigerate until chilled.
