This festive creamy strawberry gelatinmold, studded with miniature marshmallows, can be served eitheras a holiday side dish or dessert.
Recipe: Creamy StrawberryMold
2 cups boiling water
In a medium bowl, combine boiling waterand gelatin and stir until completely dissolved. Stir in coldwater. Let stand about 20 minutes to cool to room temperature.
Add ice cream and stir until completelymelted. Stir in 1 1/2 cups of the marshmallows. (They will floatto the top.)
Spray 5-cup mold with cooking spray. Pourgelatin mixture into prepared mold.
Refrigerate 4 hours or until firm. Unmoldonto serving plate.
Garnish with remaining marshmallows. Storeleftover gelatin mold in refrigerator.
1 (6-ounce) package strawberry gelatin
1 cup cold water
2 cups vanilla ice cream, softened
2 cups miniature marshmallows – divided use
