Creamy Apple Curry Soup.

Recipe: Creamy Apple CurrySoup

2 tablespoons butter
1 onion, chopped
1 tablespoon curry powder
1 tablespoon all-purpose flour
2 pounds (about 5) Granny Smith apples, peeled, cored and chopped
3 cups warm water
1 tablespoon MAGGI Reduced Sodium Chicken Flavor Instant Bouillon
3/4 cup NESTL ® CARNATION® Evaporated Fat Freeor Lowfat 2% Milk
1/8 to 1/4 teaspoon ground white pepper

  • Melt butter in large saucepan over medium-highheat. Add onion; cook, stirring occasionally, for 3 to 4 minutesor until tender. Stir in curry powder and flour; cook for 1 minute.Stir in apples, water and bouillon; bring to a boil. Reduce heatto low. Cook, stirring occasionally, for 15 to 20 minutes oruntil apples are very tender.
  • Transfer mixture to blender (in batches,if necessary); cover. Process until smooth. Return to saucepan.Stir in half-and-half and pepper. Cook over medium-low heat,stirring occasionally, until heated through.

    Makes 4 servings.

    This resulting soup is silky smooth, creamy, and perfectly balanced.  Although the apple is almost indistinguishable in flavor, it does add a subtle sweetness, which helps cut the heat of the curry powder perfectly. It sounds, and looks amazing Laura, in spite of the 99?F temp here! It s summer, so hot soup is out of the question these days. But I m pinning this one!
