Recipe: Cream Cheese PoundCake

2 2/3 cups all-purpose flour1 (8-ounce) package cream cheese7 large eggs3 1/2 cups granulated sugar1/4 teaspoon salt1/4 teaspoon baking powder1 1/4 cups butter or margarine,softened2 teaspoons butter extract

  • Preheat oven to 350°F (175°C).Grease and flour a 10-inch Bundt or tubepan; set aside.
  • Separate eggs, and beat the whites untilstiff. Reserve the yolks.
  • Beat butter or margarine, cream cheese,and sugar until fluffy. Beat in eggyolks a little at a time. Beat in the extract, salt, baking powderand flour. Gentlyfold beaten egg whites into the batter. Pour into prepared pan.
  • Bake for about 1 hour, or until a woodenpick comes out clean.

    Makes 12 servings.
