Recipe: Cranberry-OrangeOat Bread
2 cups all-purpose flour
1 cup quick or old fashioned oats
3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup chopped fresh or frozen (thawed) cranberries
1/2 cup chopped walnuts or pecans, toasted*
3 large eggs, lightly beaten
3/4 cup milk
1/3 cup orange juice
1/3 cup vegetable oil
1 tablespoon grated orange peel
Makes 1 loaf.
*To toast nuts, spread evenly in shallowbaking pan. Bake at 350°F (175°) for 5 to 10 minutesor until golden brown, stirring occasionally. Cool completelybefore using.
