Cranberry Oatmeal Cookies recipe

Whole wheat oatmeal cookies loaded withchopped fresh cranberries AND dried, sweet-tart chewy cranberries.

Recipe: Cranberry OatmealCookies

1 2/3 cups whole wheat flour1/2 tablespoon baking soda1/4 teaspoon salt1/2 cup plus 2 tablespoons butter2/3 cup firmly packed dark brown sugar1 teaspoon vanilla extract2 large eggs1 cup old-fashioned (rolled) oats3/4 cup chopped walnuts2 cups coarsely chopped fresh cranberries1/2 cup craisins (dried cranberries)

  • Preheat oven to 350°F (175°C).
  • In small bowl combine wheat flour, bakingsoda and salt. Set aside.
  • In medium bowl with electric mixer creambutter and sugar until fluffy. Add eggs and vanilla,mixing well.
  • Stir flour mixture into butter mixtureuntil just mixed. Stir in the oats. Fold in nuts and cranberries and craisins.
  • Drop by spoonfuls onto non-stick bakingsheet, 2-inch apart.
  • Bake 8 to 10 minutes. Transferto wire racks to cool. Store in sealed container.

    Makes 2 dozen.
