Cranberry Melt-In-Your-Mouth Cake recipe

Similar to a French clafouti, this is oneof the easiest cranberry cakes ever.

Recipe: Cranberry Melt-In-Your-MouthCake

2 cups cranberries, rinsed, picked over,and patted dry
1 1/2 cups granulated sugar – divided use
1/2 cup chopped nuts
2 large eggs
1/2 cup butter, melted and cooled
1/2 cup margarine, melted and cooled
1 cup all-purpose flour

  • Preheat oven to 325°F (160°C).
  • Mix the cranberries, 1/2 cup of the sugar,and the nuts and pour into a greased 10-inch pie plate.
  • Beat together the eggs and remaining 1cup sugar. Add the flour, melted butter and margarine, stirringto blend well. Pour the batter over the cranberry mixture.
  • Bake for 50 to 60 minutes. Serve plainor with vanilla ice cream.

    Makes 6 to 8 servings.
