Cranberry Loaf recipe

A deliciously nutty tasting quick bread,this cranberry and golden raisin loaf includes graham crackercrumbs in the batter as well as the zest of an orange.

Recipe: Cranberry Loaf

1 cup all-purpose flour1 cup graham cracker crumbs2/3 cup packed brown sugar2 teaspoons baking powder1/2 teaspoon salt1 cup chopped fresh or frozen cranberries1 cup golden raisins1/2 cup chopped walnuts1 tablespoon grated orange rind1 beaten large egg1 cup orange juice1/3 cup vegetable oil

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mix together flour, crumbs,brown sugar, baking powder, and salt. Stirin cranberries, raisins, nuts, and orange rind. Add beaten egg,orange juice, and oil. Stir until justblended. Spoon into a greased 9 x 5 x 3-inch loaf pan.
  • Bake for 1 hour, or until inserted woodenpick comes out clean. Cool in pan for 10minutes. Remove from pan to a wire rack to cool completely. Wraptightly to store.

    Makes 1 loaf.
