Cranberry Granola Nut Bars recipe

Cranberry Granola Nut Bars.

These colorful, sweet treats are especiallynice for the holidays, but don’t let that stop you from servingthem year-round.

Recipe: Cranberry GranolaNut Bars

1/2 cup butter, softened
1 1/2 cups all-purpose flour
1 pack of spices from Concord Foods’ Sweet Potato Casserole Mix*
1/4 cup waterTopping:
1 cup butterscotch chips
1/4 cup light corn syrup
2 tablespoons butter, softened
1 tablespoon waterFilling:
1 cup Ocean Spray® Cranberries, coarsely chopped, fresh orfrozen
1 cup granola flake cereal, with raisins, almonds, and dates
1 cup mixed nuts1 pouch of marshmallows from Concord Foods’Sweet Potato Casserole Mix**

  • Preheat oven to 375°F (190°C).
  • For Crust: In medium mixer bowl combineall crust ingredients. Beat at medium speed until well mixed.
  • Pat mixture onto bottom of 13 x 9-inchbaking pan.
  • Bake for 10 to 12 minutes or until crustis light brown. Remove from oven; set aside.
  • For Topping: Meanwhile, in 1 quart saucepancombine all topping ingredients. Cook over medium heat untilbutterscotch chips melt and mixture has come to a boil (5 to7 minutes).
  • For Filling: Sprinkle cranberries, granolacereal, and mixed nuts on top of crust.
  • Pour butterscotch topping evenly overcranberry mixture.
  • Continue baking for 10 minutes. Removefrom oven.
  • Sprinkle top of bars with package of marshmallows.
  • Return to oven. Continue baking for 3to 4 minutes or until marshmallows are softened and puffy. Removefrom oven.
  • Cool completely. Cut into bars.

    Makes 24 bars.

    *If unavailable in your area, substitutewith 1 teaspoon pumpkin spice or ground cinnamon.

    **If unavailable in your area, substitutewith 2 cups miniature marshmallows.

    The honey and brown sugar really helps with keeping the bars together. Chocolate chips added to the mixture help, too. We add some to the granola mixture while it is still warm. You might notice some of the chocolate melts this is totally okay, it acts as extra glue, holding the bars together. After that, we add more chocolate chips to the top these don t melt. Hello Guys, i have a question instead of a comment. Can you sub coconut oil for butter in this recipe? And seeds for nuts? I have a very restricted diet. Thank you in advance for your response
