Recipe: Cranberry-DressedMixed Greens
with Apples & Glazed Pecans

Dressing:2/3 cup (5 ounce can) NESTL ®CARNATION® Evaporated Fat Free Milk1/2 cup sweetened dried cranberries3 tablespoons mayonnaise3 tablespoons cranberry juice concentrate2 teaspoons lemon juice1 small clove garlic, finely chopped (optional)1/4 teaspoon salt1/4 teaspoon ground black pepper1/2 teaspoon dried tarragon leavesSalad:6 cups (about 5.5-ounce bag) mixed babygreens2 tart apples (such as Granny Smith),cored and diced1/2 cup sweetened dried cranberries1/2 cup glazed pecans

  • For Dressing: Place evaporated milk, cranberries,mayonnaise, cranberry juice concentrate, lemon juice, garlic,salt and black pepper in blender; cover. Blend until combined.Stir in tarragon. Makes 1 1/4 cups.
  • For Salad: Combine greens, apples, cranberriesand 1 cup dressing in large bowl. Sprinkle with pecans. Servewith remaining dressing, if desired.

    Makes 4 servings.
