Cranberry “Crunch” Cookies recipe

Cranberry 'Crunch' Cookies.

The cranberries and chopped chocolate Crunchbar give these reduced-carb cookies just the right touch of sweetness.Perfect for any occasion.

Recipe: Cranberry “Crunch”Cookies

1/4 cup (1/2 stick) unsalted butter, softened3 tablespoons granular sugar blend forbaking (such as SPLENDA)2 tablespoons brown sugar blend for baking(such as SPLENDA)1 large egg1/2 teaspoon vanilla extract1/4 teaspoon grated orange peel3/4 cup all-purpose flour1/4 teaspoon baking soda1/4 cup dried cranberries1 (1.55 ounces) NESTL CRUNCH CandyBar, chopped

  • Preheat oven to 350°F (175°C).
  • Beat butter, granular sugar blend andbrown sugar blend in small mixer bowl until smooth. Beat in egg,vanilla extract and orange peel. Gradually beat in flour andbaking soda. Stir in cranberries and chopped Crunch bar. Dropby rounded teaspoon onto ungreased baking sheets.
  • Bake for 7 to 9 minutes or just untilgolden around edges. Cool on baking sheets for 2 minutes; removeto wire racks to cool completely.

    Makes 24 (2 dozen) cookies.

    This was one of his best cookies and I’ve treasured the recipe through the years – especially when I had extra graham crackers to use up. Until now I’ve always made the cookies big and thick, but being that I am still all about “minis”, I used some of the dough to make small quarter-sized oatmeal cranberry crunch minis. Have you tried any of the others?
