A delightfully sweet-tart dessert that’scool and refreshing!
1 (12-ounce) package fresh or frozencranberries2 cups water1 3/4 cups granulated sugar1 cup orange juice1/4 cup lemon juice1 teaspoon grated orange peel
In a saucepan, bring cranberries and waterto a boil. Reduce heat; simmer for 5minutes. Press through a strainer to remove skins; discard skins.
To the juice, add sugar, orange juice,lemon juice and orange peel; stir until the sugarhas dissolved. Pour into an 8-inch square pan. Cover and freezeuntil ice begins to form around theedges of the pan, about 1 to 1 1/2 hours and stir.
Freeze untilmushy, about 30 minutes. Spoon into a freezer container; coverand freeze.
Remove from the freezer 20 minutes beforeserving. Scoop into dessert dishes andserve.
Makes 6 servings.
