Cranberry Bread recipe

Recipe: Cranberry Bread

2 cups whole wheat flour2 cups all-purpose flour1 tablespoon baking powder1 teaspoon baking soda1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1 cup packed brown sugar1/2 cup granulated sugar1/2 cup butter1 tablespoon grated orange rind1 1/2 cups orange juice2 large eggs2 cups fresh cranberries, coarsely chopped1 cup nuts, chopped2/3 cup raisins

  • Sift dry ingredients. Cut in butter untilcoarse meal. Combine rind, orange juice and eggs; add to dry ingredients and mix to moisten. Foldin berries, nuts and raisins. Turn into greased and floured 9 x 5-inch bread pans.
  • Bake at 350°F (175°C) for 55 to60 minutes or until wooden pick inserted in center comesout clean. Cool in pan 10 minutes, then turnout on rack to finish cooling.

    Makes 1 loaf.
