Cranberry Banana Bread.

Banana pairs up with fresh cranberriesto make one incredibly moist and flavorful quick bread.

Recipe: Cranberry BananaBread

1 cup granulated sugar
1/2 cup butter or margarine, softened
1 cup mashed banana
1/4 cup milk
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup chopped walnuts
1 1/2 cups coarsely chopped Ocean Spray® Fresh orFrozen Cranberries

  • Preheat oven to 350°F (175°C).
  • Grease an 8 1/2 x 4 1/2 x 2 1/2 -inchloaf pan. Mix sugar and butter together in a medium mixing bowluntil completely blended.
    Add banana, milk and eggs, mixing well. Add dry ingredients,mixing just until moist. Stir in nuts and cranberries. Spreadbatter evenly in a loaf pan.
  • Bake for 1 hour and 10 minutes or untila toothpick inserted into the center of the bread comes out clean.Remove from pan and cool.

    Makes 1 loaf (12 servings).

    It would be fair to say that this month is a crush of madness. We all do a pretty fair job of acting like we ve got our heads on straight, but I know what s up. I also know how many rotting bananas you have in your fruit bowl so, there s no escaping this bread. Embrace the simplicity. Add cranberries. It s festive and appropriate. Place a rack in the center of the oven and preheat to 350 degrees F. Spray a 9?3-inch loaf pan with nonstick cooking spray and line with parchment paper leaving about two inches of parchment paper to hang over two sides of the loaf pan. Parchment paper will make the loaf much easier to remove from the pan.
