Cr pes with Caramel Sauce with Mascarpone Cheese recipe

Crepes with Caramel and Mascarpone Cheese.

An elegant cr pes dessert that willmake any occasion special.

Recipe: Cr pes withCaramel Sauce with Mascarpone Cheese

3/4 cup whipping cream – divided use
4 ounces white chocolate, chopped
8 ounces Wisconsin Mascarpone Cheese
1 tablespoon fresh lime juice
3/4 cup apricot jamSauce:
1/2 tablespoon butter
1 (13.4-ounce) can or bottle dulce de leche (cajeta) caramelsauce (about 1 1/2 cups)
1 cup milkCr pes:
12 purchased or homemade cr pes (see recipe)
1/2 cup pecans, chopped

  • For Filling: Heat 1/2 cup whipping creamjust to boiling point. Remove from heat and add chocolate; letstand 3 minutes. Stir until smooth; set aside.
  • Whisk together remaining whipping creamand Mascarpone. Stir in chocolate mixture, lime juice and jam.Refrigerate until thickened.
  • Preheat oven 350°F (175°C).
  • For Sauce: Whisk together sauce ingredientsin pan. Bring to boil, reduce heat and simmer until slightlythickened. Set aside.
  • Assemble cr pes: Spread 1/3 cupof filling almost to edges of each cr pe. Fold like ablintz. Place in shallow dish and cover with sauce. Sprinklenuts over.
  • Bake for 20 minutes.
  • Serve warm.

    Makes 8 to 10 servings.

    To serve, spread about 3 tablespoons of the mascarpone cream over half of one crepe. Fold crepe in half, then in half again to create a wedge-shaped piece. Spoon the fresh strawberries over part of the crepe; drizzle caramel sauce over strawberries. Repeat with remaining crepes and serve.
