Country Griddle Cakes recipe

A good, basic old fashioned recipe forpancakes.

Recipe: Country Griddle Cakes

2 cups all purpose flour2 teaspoons baking powder2 teaspoons granulated sugar1 teaspoon salt2 cups milk1/2 cup butter, melted and cooled slightly3 large eggs4 tablespoons (about) butterMaple syrup

  • Stir first 4 ingredients in large bowl.Whisk milk, melted butter and eggsin medium bowl. Add to dry ingredients andwhisk until blended but small lumps remain. Let stand30 minutes.
  • Melt 1 tablespoon butter in large skilletover medium-high heat. Drop batterby scant 1/4 cupfuls into skillet. Cook pancakesuntil bottoms are golden brown and bubbles formon top, about 2 minutes. Turn and cook until bottoms are golden brown, about 1 minute. Transfer to platter. Tent griddle cakes with foilto keep warm.
  • Repeat with remaining batter, adding morebutter to skillet as necessary.
  • Serve pancakes hot with maple syrup.

    Makes about 16 griddle cakes.
