A good, basic old fashioned recipe forpancakes.
Recipe: Country Griddle Cakes
2 cups all purpose flour2 teaspoons baking powder2 teaspoons granulated sugar1 teaspoon salt2 cups milk1/2 cup butter, melted and cooled slightly3 large eggs4 tablespoons (about) butterMaple syrup
Stir first 4 ingredients in large bowl.Whisk milk, melted butter and eggsin medium bowl. Add to dry ingredients andwhisk until blended but small lumps remain. Let stand30 minutes.
Melt 1 tablespoon butter in large skilletover medium-high heat. Drop batterby scant 1/4 cupfuls into skillet. Cook pancakesuntil bottoms are golden brown and bubbles formon top, about 2 minutes. Turn and cook until bottoms are golden brown, about 1 minute. Transfer to platter. Tent griddle cakes with foilto keep warm.
Repeat with remaining batter, adding morebutter to skillet as necessary.
Serve pancakes hot with maple syrup.
Makes about 16 griddle cakes.
